Eggless Challah (traditional bread)

Since it is the day before the Jewish Sabbath ("Shabbos") I thought I'd post my recipe for eggless challah. This is traditionally a braided bread. The classic version calls for eggs in the bread and for an egg wash (glaze). I omit the eggs and the glaze. Try it, you'll never miss the eggs!

Eggless Challah 

6 Tbsp dry active yeast (like Fleishman's- I use the Sam's industrial size ones)

2 cups sugar

5 1/2 cups very warm water

(mix all ingredients till foamy)

1 T vanilla extract

pinch of salt (sparing)

1 3/4 cups canola oil

5 lbs bread flour ( I like Gold Medal Better for Bread in orange bag)

 

Knead in a large bowl till dough is consistent and smooth and not too sticky.

Shape into loaves (be creative- how about a 4 or 6 strand braided challah)

variations: omit vanilla and add a generous dash of dried minced onion

sprinkle sesame and/or poppy seeds (if tolerated) for an "everything challah"

 

Bake at 350 for 30 minutes

yield: about 5 medium loaves
